Ingredients
1. 1 1/2 Ib filleted white fish
2. 1/2 pt water
3. 1 cup flour
4. 2 tsp salt
5. I tsp oil
6. Fat for frying
7. Sweet and sour sauce
METHOD
1. Clean fish and remove skin.
2. Mix salt, oil, flour and add the water to make a thick smooth batter. Beat the mixture and leave for about (15 to 20) minutes.
3. Heat the fat then dip the fish in the batter and fry until golden brown.
4. Drain on kitchen papers.
5. Place fish in a bowl and pour the heated sweet and sour sauce over.
6. Garnish with pieces of fried pineapple
SWEET AND SOUR SAUCE
Ingredients
1. 3 level tbsp Sugar
2. 2 level tbsp cornstarch ( marginer)
3. 1/4 pt water or juice from chunks
4. 3 tbsp vinegar
5. 1 tsp salt
6. 1/2 cup ketchup
METHOD
Combine all the sauce ingredients together and cook gently over slow heat.
